In a capacious pot, combine the cocoa, sugar and starch.
Gradually pour milk while whisking. Heat until it boils, stirring constantly.
Stir for 5 minutes, then remove from heat and add whipped cream.
Pour into individual bowls and let set in refrigerator before serving.
Cocoa Mousse
Serves four:
500ml milk
30g bitter cocoa
40g sugar
25g starch
1 cup whipped cream
