Prepare the vinaigrette with olive oil, lemon juice, minced mint, mustard, salt and black pepper.
Cook the couscous normally, season with the vinaigrette, then add pomegranate seeds, chopped pistachios and almonds, baby lettuce and sliced cucumber.
Couscous Salad with Pomegranate and Pistachio
Serves four:
150g couscous
half pomegranate
3 tbsp pistachios, toasted
3 tbsp almonds, toasted
1 cup baby lettuce
1 small cucumber
juice from half lemon
30ml olive oil
1 tbsp Dijon mustard
1 tbsp mint leaves
salt and black pepper
