Koeksisters
Syrup:
125g cane-sugar
50ml water
lemon zest
Dough:
1 egg
30g butter
200g all-purpose flour
4-5 tbsp. water
15g baking powder



Put the water, cane-sugar and lemon zest in a pot and bring to a boil, stirring. Set aside the syrup.
Melt the butter and beat with the egg.
Stir together the flour and baking powder on a flat surface, then make a well. Put the butter and the egg into the well and knead it. Add some spoonful of water if needed.
Using a heavy rolling pin (or dough sheeter), roll the dough about 3 mm thick.


Cut into small 10 x 3 cm rectangles.

Continue until the end.



Cut each rectangle into 3 strip but not through the top, in a "fork" shape, as shown in the picture



Pinch the three stripes at the end, to close the braid.



Plait the dough, taking the section on the bottom side and cross it over the middle section.



Fry the koeksisters in hot oil, turning them after 1 minute.



Repeat with the other side.



Dip the koeksisters into the syrup.

Let rest and serve.
