Cut each artichoke heart into quarters lengthwise and boil them.
Fry the garlic in a large frying pan with 4 tbsp. olive oil. Remove the garlic and add the artichokes.
Fry a few minutes minutes, stirring.
Beat together egg, parmesan, parsley and a pinch of salt.
Pour the egg in the pan, and spread them evenly over the artichokes. Cook on medium heat 3-4 minutes.
Turn the omelette by putting a plate on top of the frying pan and turning it upside down. Cook a few minutes and serve.
Artichokes Omelette
Serves four:
6 artichokes hearts
5 eggs
2 cloves of garlic
1 tbsp. grated parmesan
parsley
