Vindaloo Curry Paste
Toast cumin, coriander, mustard, fenugreek seeds and black peppercorns in a small pan, then grind finely.
Add red pepper, turmeric powder and sugar.
Pour the vinegar and mix well.

2 tbsp. minced red pepper
1 tsp. cumin seeds
1 tsp. coriander seeds
1 tsp. mustard seeds
1 tsp. fenugreek seeds
1 tsp. black peppercorns
1 tsp. turmeric powder
1 tsp. sugar
50ml white vinegar
