Smoked salmon risotto
Slice the leek and fry with butter in a large pot.
Add the rice and stir to coat with
the butter. Pour in the sparkling wine and let evaporate.
When all the liquid is absorbed, add warm water or warm fish broth. Continue until the rice is almost cooked.
Pour the single cream in the pan and mix well.
Remove from heat, add the smoked salmon cut into stripes. Serve hot.

1 leek
100ml single cream
200ml sparkling wine
fish broth
