Peel the potatoes and cut into 2cm thick slices. Put them on a oiled baking pan, sprinkle with salt and pepper and bake in preheated 200° C (392 F) oven 10 minutes.
Meanwhile wash the mackerels, remove entrails after cutting the full length of the belly and place a sprig of parsley inside each cavity.
Put the mackerels on the potatoes, sprinkle with olive oil and cover. Bake for another 30 minutes.
if they're too much broth, uncover the pan.
Bone the mackerels. Put the fillets and the potato slices on a serving plate with the cooking broth.

4 mackerel
3-4 potatoes
4 sprigs of parsley
olive oil
