Wash the tuna and place it in a saucepan.
Cover with salted water, prepared using 85g of salt per liter of water.
Bring to a boil and simmer for 90 minutes.
Drain and allow to dry for at least 12 hours.
Bone and skin the tuna pieces. Put in glass jars and cover them with vegetable oil.
Close the jars carefully.
Wrap the jars with a cloth or newspaper and put in a pot. Cover with water and boil 30 minutes. Allow to cool down without removing the pot cover.
