Pork with Spinach Curry
Pork with Spinach Curry
Serves four:
400g pork, cubed
500g fresh spinach
1/2 tsp. ginger
1 clove garlic
1 red chili pepper
1 tbsp. butter
1 tsp. curry
1/2 tsp. cinnamon
1/2 tsp. amchurDry mango powder, used as ingredient in indian recipes.
1 pinch nutmeg
100ml milk



Place pork cubes in a pot, sprinkle with minced ginger, chili pepper and garlic and let rest 20 minutes.

Cover with water and cook over low heat 30 minutes.

Add spinach and cooking juice in the pot.



Remove the pot from heat. Drain the pork cubes, set aside the cooking juice.
Fry the meat in butter for a couple of minutes.
Add milk, curry, cinnamon, amchurDry mango powder, used as ingredient in indian recipes. and nutmeg and cook until the liquid is absorbed.




Stir and cook 5 minutes.



Meanwhile cook the spinach, drain and puree them in food processor.



Serve hot, with boiled rice or chapati.
