Pizza Norma (with Aubergines)
Cut the aubergines lengthways in long slices about 1/2 cm thick.
Put the slices in a bowl with salted water, cover and press under something heavy 1 hour.
Using a heavy rolling pin (or dough sheeter), roll the dough out very thin. Put in a greased baking pan. Drain the aubergines and fry them in hot olive oil. Fry until the slices are golden all over and drain.
Spread the tomato sauce on the pizza and arrange the fried aubergines on it.
Bake in preheated 220° C (428 F) oven 20-25 minutes.
Sprinkle grated ricotta salata and serve.
