Ingredients

1 ripe banana
1 egg
2-3 tbsp. all-purpose flour
1 tsp. cinnamon
1 tbs. icing sugar

Crush the banana with a fork. Add the beaten egg, the flour, and stir well.
Heat some oil in a pan and dollop spoonfuls of the batter into the pan. Fry 1 minute and turn gently, using a stirring paddle.
Remove from oil and drain on paper towel.
Put the fritters on a serving plate and sprinkle with cinnamon and icing sugar.
