Thai Curry paste

Ingredients

3 shallots
2 cloves garlic
1 thumb-size piece of ginger
2 lime leaves
1 lemon grass stalk
1 tbsp. fish sauce (Nuoc Nam)
1/2 tsp. coriander, grinded
1/2 tsp. cumin, grinded
1 pinch cinnamon, grinded
1 tsp. salt

4 fresh green Cayenne peppers
2-3 fresh yellow or green chili peppers
1 tbsp turmeric powder
4 fresh red Cayenne peppers

Peel the shallots, garlic and ginger. Remove the stems from the lime leaves.
Add the lemon grass and blend with a food processor, until creamy.
Add fish sauce, coriander, cumin, cinnamon and salt and mix well.
Divide into three parts.

Thai Green Curry Paste: blend 4 green peppers and one third of the basic paste in the food processor.
Thai Yellow Curry Paste: blend 2-3 yellow peppers, turmeric and one third of the basic paste in the food processor.
Thai Red Curry Paste: blend 4 red peppers and the remaining third of the basic paste in the food processor.
