Hot rice salad


Serves four:
300g rice
4 Hot Lemon (Yellow) Peppers
100g chicken breast
1 red sweet pepper
150g canned corn
250g cooked or canned cannellini beans (or white beans)
1 bunch of chives
150ml whole yogurt
Cook the rice in boiling water and drain it well.
Meanwhile cut the chicken breast into stripes. Put in a frying pan with oil and cook for a few minutes.
Put the rice in a salad bowl with chichen stripes, red sweet pepper cut into slices, corn and beans.
Prepare a sauce combining yogurt, chives and minced yellow peppers.
Let set in refrigerator for a couple of hours before serving.
