Dalla caratteristica forma aghiforme, le foglie di rosmarino si possono consumare fresche o essicate, hanno un aroma resinoso con un retrogusto amaro.
Il rosmarino ha la particolarità di mantenere l'aroma anche quando cucinato, e per questo un rametto di rosmarino è spesso aggiunto a arrosti e teglie di patate e altre verdure al forno, nel bouquet garni e per insaporire pane e focacce.

Si accosta a diversi tipi di carne: pollo, maiale e agnello, inoltre è perfetto su patate, legumi e formaggi.
Il rosmarino dona un tocco mediterraneo a molte miscele di erbe aromatiche. È infatti l'ingrediente immancabile di molte miscele di erbe in vendita già preparate, e si accosta perfettamente a salvia, aglio, prezzemolo, origano e timo.
