Le sue foglie verde argenteo dalla superficie setosa hanno un aroma ricco e pungente, speziato e leggermente amaro, che diventa più intenso quando vengono essiccate. Si accosta a formaggi a pasta morbida, funghi, noci, carne di manzo e maiale. E' consigliata per sughi e uova o per insaporire dei soffritti di burro.

La salvia è usata in quasi tutti i paesi europei, principalmente in Italia, nei paesi dell'est e nel Regno Unito, dove aromatizza il famoso Sage Derby Cheese, formaggio Derby alla salvia dal classico aspetto marmorizzato.
Negli Stati Uniti è una delle erbe tradizionali del Giorno del Ringraziamento, e è usata per farcire il tacchino.
E' inoltre tra gli ingredienti delle Erbe di Provenza francesi.
