Il cumino è una spezia nota fin dall'antichità e diffusa nel mondo come ingrediente di piatti tradizionali: è usata in medio oriente sul kebab, in India come ingrediente della polvere curry, in Olanda sui formaggi, in Francia su pani tradizionali, in Messico nel celebre chili con carne. Dal sapore agro e vivace, il cumino è usato per il liquore Kummel e in molte miscele di spezie orientali e arabe.

La parte della pianta usata come spezia sono i semi dall'aroma agrumato, che vengono aggiunti a pane, salse, carne di maiale o pollo, formaggi e legumi. I semi sono comunque di piccole dimensioni e si ammorbidiscono durante la cottura, per questo è preferibile usarli interi, o tritarli sul momento per preservarne meglio l'aroma.

Il cumino si accosta molto bene a piatti di carne, in particolare maiale e pollo, in aggiunta a spezzatini, nella marinatura o nell'impasto di tortini di carne e polpette. E' particolarmente indicato per donare un tocco tex-mex a molte ricette, e per insaporire verdure e legumi.
